How to Make Mason Jar Burrito Bowl
Cook the Brown Rice
Cook the brown rice according to the package directions—once cooked, mix in the lime juice and chopped cilantro.
Prepare the TVP “Beef”
In a bowl, combine the TVP, spices, and water. Let it sit for 10 minutes to allow the TVP to rehydrate. Add rehydrated TVP to a pan over medium heat and cook until all the water is absorbed.
Make the Chipotle Dressing
Prepare the chipotle dressing by blending the chipotle peppers in adobo sauce, oat yogurt, garlic, lime juice, maple syrup, and cumin. Add salt to taste, although the chipotle peppers in adobo sauce are quite salty, so you may not need to add more salt.
Prepare the Veggies
Shred the romaine lettuce and chop your tomato and avocado.
Assemble the Mason Jar Burrito Bowl
Start assembling the salad jars by layering the ingredients in the following order:

- Do I need to use chipotle pepper in adobo sauce? YES! These peppers pack in a rich flavor and make the dressing taste incredible. Trust me; you are missing out if you have not tried these peppers! They make any dish taste restaurant quality and can easily be found on Amazon and at most grocery stores!
- Can I use a different type of rice for the cilantro lime rice? Yes! While brown rice is rich in fiber and provides a nutty flavor and a chewy texture, you can substitute brown rice with white rice, or even quinoa. For those seeking a low-carb option, cauliflower rice is an excellent choice. It’s also a fantastic way to sneak in some extra veggies! Adjust the cooking time accordingly based on the type of rice you choose.

Allergies & Substitutions
- Swap the TVP! If you’re not a fan of TVP or prefer a different protein source, you can easily replace it with cooked lentils, chickpeas, pan-fried tofu, or tempeh. Customize the recipe to suit your taste and dietary preferences.
- Make it Spicy! If you love a spicy salad, feel free to add extra chipotle peppers in adobo sauce or a pinch of cayenne pepper to the dressing. Adjust the heat level to your liking.
- Swap Oat yogurt for another vegan yogurt or silken tofu.
- Make it soy free! You can swap TVP for your favorite soy-free mock meat or seitan to make these salad jars without soy. Or try seasoning up your favorite legume with taco seasonings! Ingredients
Cilantro Lime Rice
- 1 cup uncooked brown rice
- 1 lime juice
- 1/2 cup fresh chopped cilantro
TVP ‘Beef’
- 1 cup textured vegetable protein (TVP)
- 1.5 cups water
- 2 tsp chili powder
- 1.5 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- 1/4 tsp chili flakes
- 2 tbsp nutritional yeast
- 1/4 tsp salt
Chipotle Dressing
- 3/4 cup oat yogurt
- 2-3 tbsp chipotle peppers in adobe sauce
- 1 garlic clove small
- 1 lime juice
- 1 tsp maple syrup
- 1/8 tsp cumin
- salt to taste
For Assembling the Salad Jars
- 3/4 cup corn
- 3 tomatoes small
- 6 cups romaine lettuce shredded
- 3/4 cup black beans
- 1 avocado
Instructions
- First, cook your brown rice according to the package directions. When it is finished cooking, mix in your lime juice and chopped cilantro.
- Next, make your TVP "Beef." Add your TVP, spices, and water to a bowl and combine. Let that sit for 10 minutes for your TVP to rehydrate.
- Add rehydrated TVP to a pan over medium heat and cook until all the water is absorbed.
- Make your Chipotle dressing in a small blender. Add salt as needed to taste, although the chipotle peppers in adobo sauce are quite salty, so you may not need to add any extra!
- Chop up the rest of your veggies.
- Assemble your salad jars with your dressing at the bottom, followed by your cilantro lime rice, TVP ‘beef”, corn, tomato, avocado, black beans, and lastly, your lettuce.
- Keep your wilting lettuce at the top of the salad jar so it stays crisp and fresh!
