Oven-Baked Sweet Potato Toast

This sweet potato toast recipe is the best bread replacement and is perfect for meal prep! It can be used for avo toast, PB&J's an more and requires minimal prep time! This may be your new favorite way to eat sweet potatoes!

Ingredients
  

  • 1 large Sweet Potato
  • Cooking Spray
  • Salt & Pepper

Instructions
 

  • Slice your sweet potato length wise to make long toast-like shapes.
  • Add to a greased or lined baking sheet then spray with some cooking oil & season with salt and pepper.
  • Bake for 40 minutes at 400f, flipping halfway through.
  • Eat right away or store in the fridge and pop them in the toaster whenever you'd like to eat them!
  • Feel free to double or even quadruple the recipe to make enough for meal prep!
  • Try using this for avocado toast, PB&J's, or add some nut butter and fruit on top!
