Oven-Baked Sweet Potato Toast

This may be my new favorite way to eat sweet potatoes! You can use this sweet potato toast in place of bread and use it for your avo toast, peanut butter sandwiches and more! It is a great way to get in some extra fiber and a perfect substitute for bread if you are gluten free or cutting down on your bread consumption!

  • Cooking Spray
  • Salt & Pepper

How to make sweet potato toast

This sweet potato toast is so simple to make and only requires about 5 minutes of prep time!

Wash and slice your sweet potatoes lengthwise to make long ‘toast-like’ slices. You could also slice your sweet potatoes into circle slices and use them as a finger food or appetizer!

Prep for the oven. Preheat your oven to 400 degrees Fahrenheit and spray a baking tray with cooking oil so the potatoes don’t stick. You could also use parchment paper for an oil free version! Add your sliced potatoes onto the baking tray and add some salt & pepper on top with another spray of cooking oil.

Bake your sweet potato toast for 40 minutes, flipping halfway through until the potatoes are slightly brown.

Add on your toppings and enjoy!

How to eat sweet potato toast

As avocado toast! This is by far my favorite way to eat this sweet potato toast. I love adding some smashed avo, everything but the bagel seasoning and some homemade sauerkraut with a touch of salt & pepper! – Find my homemade sauerkraut recipe here!

With some nut butter. I love adding all sorts of nut butter on top of this toast. You can do the classic PB&J or do another combination of nut butter and fruit! My fav is using powdered peanut butter and banana or almond butter and coconut shreds, but anything will work here!

Make it savory! Add on some avocado, sliced tomato and onions or try adding on a mock meat or some tofu bacon – find my tofu bacon recipe here!

Make an appetizer! This sweet potato toast could be altered to make a fun party snack! Just slice the sweet potatoes into circles, rather than long strips, and top with anything you’d like! It’s a fun and super healthy appetizer to wow your friends and family!

How to use this for meal prep

The thing I love most about this recipe is that it can be made ahead of time and used for meal prep! I often make 3-4 potatoes at a time and keep them in the fridge for whenever I’d like to have some sweet potato toast! All you need to do to is pop your slices into a toaster to heat them up! It gets the slices super crispy and heats them to perfection!

Ingredients
  

  • 1 large Sweet Potato
  • Cooking Spray
  • Salt & Pepper

Instructions
 

  • Slice your sweet potato length wise to make long toast-like shapes.
  • Add to a greased or lined baking sheet then spray with some cooking oil & season with salt and pepper.
  • Bake for 40 minutes at 400f, flipping halfway through.
  • Eat right away or store in the fridge and pop them in the toaster whenever you'd like to eat them!
  • Feel free to double or even quadruple the recipe to make enough for meal prep!
  • Try using this for avocado toast, PB&J's, or add some nut butter and fruit on top!
