PB&J Protein Cups

These PB&J protein cups will be your new favourite protein-packed dessert! Loaded with 24g of plant-protein per cup, they are the perfect high protein snack or dessert to keep on hand. These are perfect if you are a PB&J lover but want to hit your macros. Best of all they’re made with just 4 ingredients, take 15 minutes of prep time and require no baking!

Ingredients
  

  • 120 g Vanilla Protein Powder
  • 120 g PBFit Powdered Peanut Butter
  • 60 g Melted Coconut Oil
  • ¾ cup Water
  • 6 tbsp Strawberry Jam

Instructions
 

  • Add your protein powder and powdered peanut butter to a large bowl.
  • Melt your coconut oil in the microwave and add to the bowl.
  • Mix and combine, and add water as needed until you get a moldable consistency. The amount of water will vary based on the protein powder you are using. I used ¾ of a cup, but you may need to add more or less.
  • Use half of the mix and divide it into 6 muffin tins.
  • Press down with your fingers.
  • Add 1 tbsp of strawberry jam per muffin tin.
  • Divide the rest of the mixture into 6 equal balls and form them into a circle with your hands.
  • Place a circle on top of each stuffed muffin tin.
  • Place in the freezer and let it sit for at least 3 hours before enjoying.
