These gluten free pancakes are naturally sweetened and so healthy you can have them every day! Eat these vegan filled pancakes for breakfast or save them as a snack to eat throughout the week!
First start with your pancake batter. Mix the wet ingredients together and let sit for 5 minutes for the milk to curdle.
Mix the dry ingredients then add in the wet ingredients and mix but be careful not to overmix (lumps are okay!). Let the batter sit for a further 5 minutes to thicken.
Slice your apple into circular slices and remove the core.
Spread some peanut butter on a slice of the apple then place another slice of apple on top.
Dunk your apple peanut butter sandwich into your pancake batter and coat well.
Pan fry over medium heat until golden and crispy on both sides.
