Apple and Peanut Butter Vegan Stuffed Pancakes
These peanut butter apple stuffed pancakes are out of this world delicious! They are made with whole foods and so healthy you can have them every day of the week! These vegan stuffed pancakes are naturally sweetened, gluten free and refined sugar free. You can eat them as pancakes or save them for later and eat individually as a healthy snack!
What ingredients do I need for vegan stuffed pancakes?
- Apples
- Peanut Butter
- Plant Milk
- Maple Syrup
- Apple Cider Vinegar
- Vanilla
- Oat Flour: You can make this yourself by blending oats in a high speed blender!
- Baking Powder
- Himalayan Salt
How to make vegan stuffed pancakes
These peanut butter apple stuffed pancakes only require a few simple steps!
Slice the apple: Begin by slicing your apple into thin circles. Then remove the core using a small knife.
Make a sandwich: Once you have sliced your apples it’s time to lather on that peanut butter! Add the peanut butter onto one slice of apple then sandwich it together with another slice of apple.
Making the batter: To make your pancake batter mix your wet ingredients then let sit for 5 minutes. This will curdle the milk producing soft and fluffy pancakes! While the wet mix is sitting prepare the dry mix. Mix wet with dry, being careful not to overmix (lumps are okay!), then let the batter sit for another 5 minutes.
Dunk the apple sandwich: Dunk your apple sandwich in the pancake batter making sure to thoroughly coat! Pan fry both sides until golden brown and enjoy!
Other ways to use these vegan filled pancakes
These stuffed pancakes obviously taste unreal with some maple syrup drizzled on top for a Sunday breakfast but they actually keep quite well in the fridge or freezer as well! I love saving some of these pancakes in my fridge or freezer and eating them as a healthy snack throughout the week. You can take them on the go or send a few cakes with your kids to school!
Substitutions
- I think peanut butter and apple is a winning combo, but if you are not a fan of peanut butter try using a different nut butter for your vegan filled pancakes!
- For a lower calorie and lower fat option swap peanut butter for powdered peanut butter! Powdered peanut butter also has a ton of extra protein!
- Using a higher calorie plant milk such as oat or soy helps the milk to curdle, but you can use any plant milk you have on hand!
- Swap maple syrup for another liquid sweetener such as agave or monkfruit!

Peanut Butter and Apple Vegan Stuffed Pancakes
Ingredients
- 1-2 Apples depending on size
- ¼ cup Peanut Butter
For the pancake batter
- 1+¼ cup Plant Milk oat or soy work best, but any plant milk will do
- 1 tbsp Maple Syrup or other liquid sweetener
- 1½ tbsp Apple Cider Vinegar
- 1½ tsp Vanilla
- ½ tsp Salt
- 1½ cups Oat Flour
- 1½ tbsp Baking Powder
Instructions
- First start with your pancake batter. Mix the wet ingredients together and let sit for 5 minutes for the milk to curdle.
- Mix the dry ingredients then add in the wet ingredients and mix but be careful not to overmix (lumps are okay!). Let the batter sit for a further 5 minutes to thicken.
- Slice your apple into circular slices and remove the core.
- Spread some peanut butter on a slice of the apple then place another slice of apple on top.
- Dunk your apple peanut butter sandwich into your pancake batter and coat well.
- Pan fry over medium heat until golden and crispy on both sides.
