Pizza Spring Rolls

Ingredients
  

  • 28 sheets spring roll pastry
  • 1 package vegan pepperoni (128g)
  • 2 large mushrooms
  • 1/2 green bell pepper
  • 3/4 cup tomato sauce
  • 1/3 cup shredded vegan mozzarella cheese
  • 1/2 cup tomato sauce for dipping
  • vegan parm for topping
  • fresh basil for serving

Instructions
 

  • Add your pepperoni, mushrooms, and green pepper to a large cutting board and chop until everything is diced into tiny pieces.
  • Assemble your spring rolls using two sheets of pastry per roll. Divide your mixture into 14 rolls. Place 1 tbsp of the chopped mixture onto the bottom of the spring roll sheet, followed by 1 tbsp of cheese, 1 tbsp of tomato sauce, and another tbsp of mixture on top. Wet the spring roll, tuck in the sides, and roll it up.
  • Add your pizza rolls to your air fryer and fry at 400f for 6-8 minutes. Be careful not to overcook, or the cheese will ooze from the sides. Top with vegan parm, dunk in extra tomato sauce, and enjoy!
