  • First, make your marinade. Mix your marinade ingredients soy sauce, rice wine vinegar, sesame oil, and maple syrup in a small bowl. Mix to combine and divide into 3 small jars.
  • Steam your edamame until cooked, then run under cold water to cool.
  • Slice your cucumbers lengthwise, then place them face down and use your knife to give them a smash one half at a time.
  • Slice your cucumbers into half circles.
  • Divide your cucumbers into your 3 jars, followed by your steamed edamame. Top them off with some chopped cilantro and sesame seeds.
  • Store in the fridge for up to 4 days, and enjoy!
