These Smashed Cucumber and Edamame Snack Jars combine crunchy cucumbers, protein-packed edamame, and a zesty, salty marinade to create a flavor explosion that is hard to resist. These healthy snack jars can be stored in the refrigerator for up to 4 days and are a perfect grab-and-go snack for busy weekdays.
First, make your marinade. Mix your marinade ingredients soy sauce, rice wine vinegar, sesame oil, and maple syrup in a small bowl. Mix to combine and divide into 3 small jars.
Steam your edamame until cooked, then run under cold water to cool.
Slice your cucumbers lengthwise, then place them face down and use your knife to give them a smash one half at a time.
