- 1.5 cups edamame
- 2 tbsp soy sauce
- 2 tbsp rice wine vinegar
- ¼ tsp sesame oil
- 1 tsp maple syrup
- 1 tsp sesame seeds
- 1 tbsp chopped cilantro

- First, make your marinade. Mix your marinade ingredients soy sauce, rice wine vinegar, sesame oil, and maple syrup in a small bowl. Mix to combine and divide into 3 small jars.
- Steam your edamame until cooked, then run under cold water to cool.
- Slice your cucumbers lengthwise, then place them face down and use your knife to give them a smash one half at a time.
- Slice your cucumbers into half circles.
- Divide your cucumbers into your 3 jars, followed by your steamed edamame. Top them off with some chopped cilantro and sesame seeds.
