Smoked Tofu Tacos

Made with protein-packed tofu and crunchy cabbage seasoned with lime juice and maple syrup, all wrapped in mini tortillas, these tofu tacos are lively proof that health and flavor can go hand in hand. The Smokey tofu pairs perfectly with the slightly sweet and zingy coleslaw, making this the perfect sweet and Smokey combo. Drizzle with some vegan sriracha mayo for an extra kick!

Ingredients
  

  • 8 mini tortillas

For the Tofu

  • 400 g extra firm tofu
  • ½ tbsp olive oil
  • Juice of ½ a lemon
  • 1 tsp caper brine
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp smoked paprika

For the Coleslaw

  • 5 cups cabbage or coleslaw mix
  • Juice of 1 lime
  • 2 tsp maple syrup
  • Salt and pepper to taste

Optional Toppings

  • 1 sliced avocado
  • Cilantro
  • Red onions
  • Sriracha mayo

Instructions
 

  • First, prepare your Smokey tofu. Slice it into cubes, or rip it into irregular shapes and place it in a large bowl. Add your olive oil, lemon juice, caper brine, and seasonings and toss well to combine.
  • Air fry at 400f for 15 minutes or bake at 425 for 25-30 until crispy.
  • While the tofu bakes, prepare your coleslaw. Shred your cabbage, then add it to a bowl with some lime juice, maple syrup, and some salt and pepper to taste.
  • Assemble your tacos with some Smokey tofu, sweet and tangy coleslaw, and toppings of choice. I like to add vegan sriracha mayo and avocado, but see additional topping choices above!
