The Fluffiest Vegan Chocolate Mousse

This mousse is everything you love about chocolate mousse. It has a light, fluffy, airy texture and a deep chocolatey flavor! Try making it for your loved ones and see if they can guess the secret ingredient!

Ingredients
  

  • 1 cup Aquafaba the water from 1 can of chickpeas, it may be a little less than 1 cup
  • 120 g Dark Chocolate
  • 2 tbsp Maple Syrup
  • 1/8 tsp Salt

Instructions
 

  • Start by melting your dark chocolate. This can be done over a double boiler or in the microwave. Then let the chocolate sit for 15 minutes to cool.
  • Strain your can of chickpeas, reserving the liquid. Add the liquid to a bowl and use a hand blender and whip it until it fluffs up and develops stiff peaks. You'll know its done when you can flip it upside down and it doesn't fall out of the bowl. This should take about 10-15 minutes.
  • Add the maple syrup and salt to the whipped aquafaba and use your hand blender to whip again until everything is combined.
  • Then carefully fold in your cooled melted dark chocolate.
  • Transfer the mousse to 5-6 small ramekins that you would like to serve them out of.
  • Let the mousse sit for 1-2 hours in the fridge before eating.
  • You can top the mousse with shaved chocolate, and serve with fresh mint, berries, or coconut yogurt!
