Aquafaba Chocolate Mousse Recipe

This fluffy vegan chocolate mousse is made with only 4 ingredients! The base of the mousse is made with aquafaba! If you have never heard of aquafaba it is a fancy way of saying the juice from a can of chickpeas! It makes the mousse nice and fluffy and you don’t taste the chickpeas at all!

How do you make fluffy vegan chocolate mousse?

This chocolate mousse is easy to make and only requires 4 ingredients! First melt your dark chocolate in a double boiler or in the microwave. Then let it sit to cool for 10-15 minutes. Strain a can of chickpeas and reserve the liquid from the can. This is what we call aquafaba and will be the base of our mousse. Use a hand blender and whip the aquafaba until it becomes white and fluffy and has almost tripled in size! You will know it’s done when it forms stiff peaks and you can hold it upside down without the fluff falling out! Then whip in some maple syrup and salt until combined. Carefully fold in the melted chocolate and transfer into ramekins or containers. Let the mousse sit for 1-2 hours in the fridge and you are ready to enjoy!

What the heck is aquafaba?

Aquafaba is a fancy name for the liquid you find in a can of chickpeas, or the water you cook your chickpeas in. It has emulsifying, foaming, binding, gelatinizing and thickening properties, which basically means that it can be whipped like egg whites and used to hold together cakes and other baked goods! It is the perfect vegan egg white substitute and can be whipped just the same, making it the perfect base for our aquafaba chocolate mousse!

Don’t worry, this chocolate mousse has the same delicious chocolatey flavor and airy texture we all know and love when we think of chocolate mousse! Although the aquafaba on it’s own will have a slight chickpea taste, the addition of the chocolate and maple syrup masks the flavor! So no fear your chocolate mouse will not taste like chickpeas! Even your entire family, vegan and non-vegan are sure to love this fluffy chocolate mousse! Try and ask them if they can guess what it’s made with!

A few important tips:

  • You can use aquafaba from a can or from cooking your own chickpeas (the latter will contain to additives or preservatives which is a plus!)
  • You can also use the liquid from a can of white beans!
  • Make sure to thoroughly whip your aquafaba until is has stiff peaks, this should take about 10-15 minutes! Don’t give up!
  • You can hand whisk the aquafaba if you don’t have a mixer although it may take longer!
  • Store your mousse in the fridge for up to 3 days!

The Fluffiest Vegan Chocolate Mousse

This mousse is everything you love about chocolate mousse. It has a light, fluffy, airy texture and a deep chocolatey flavor! Try making it for your loved ones and see if they can guess the secret ingredient!

Ingredients
  

  • 1 cup Aquafaba the water from 1 can of chickpeas, it may be a little less than 1 cup
  • 120 g Dark Chocolate
  • 2 tbsp Maple Syrup
  • 1/8 tsp Salt

Instructions
 

  • Start by melting your dark chocolate. This can be done over a double boiler or in the microwave. Then let the chocolate sit for 15 minutes to cool.
  • Strain your can of chickpeas, reserving the liquid. Add the liquid to a bowl and use a hand blender and whip it until it fluffs up and develops stiff peaks. You'll know its done when you can flip it upside down and it doesn't fall out of the bowl. This should take about 10-15 minutes.
  • Add the maple syrup and salt to the whipped aquafaba and use your hand blender to whip again until everything is combined.
  • Then carefully fold in your cooled melted dark chocolate.
  • Transfer the mousse to 5-6 small ramekins that you would like to serve them out of.
  • Let the mousse sit for 1-2 hours in the fridge before eating.
  • You can top the mousse with shaved chocolate, and serve with fresh mint, berries, or coconut yogurt!
