Start my making the dough. Add the flour, salt, sugar & active yeast to a bowl and mix. Add 1 cup of warm water and mix until the dough becomes shaggy.
Put the dough on the counter and knead for 5-10 minutes until the dough comes together and is a smooth texture. Roll into a ball, place in a greased bowl, cover & proof until it has doubled in size, 30-60 min. 30 minutes is usually enough!
Take the dough out of the bowl and cut into 4-5 pieces. Roll each piece into a long strip then cut the strips into even bite-sized pieces.
Make the baking soda bath by adding the water to a pot and bringing it to a light simmer. Add your baking soda and mix.
Add the dough bites to the baking soda bath 8-10 at a time. Leave them in for about 30 seconds, flipping halfway though. Scoop out with a slotted spoon, drain excess liquid & put onto a baking tray.
Add flaky or kosher salt on top of the bites. Bake for 10-13 minutes at 450 degrees until golden all over.
Once the bites come out of the oven brush them immediately with a generous amount of vegan butter, or oil.
