Tofu Feta Cheese

Press your tofu using a tofu press or by wrapping it in a towel and placing some heavy objects on top. Leave for a minimum of 15 minutes to release the liquid so it can absorb the marinade. Then chop into small squares.
Add the marinade ingredients to a large jar and shake well.
Add in your cubed tofu to the marinade and shake well to coat. Let it sit for a minimum of 30 minutes to absorb all the flavor. Ideally let it sit overnight, this is when it tastes best!
