These TVP Black Bean Burgers are the perfect make ahead dinner! They are loaded with flavour, protein and fibre and are the perfect healthier substitute to mock meat burgers! Made with budget friendly ingredients and easily frozen for later these burgers are perfect for crazy busy weeknight dinners.
Roughly chop your red pepper and onion and add to your food processor. Add your walnuts, flax, garlic, salt, soy sauce, and spices, and pulse until smooth, leaving some small pieces intact.
It's best to use a large food processor for this recipe as there is a lot of volume - or pulse in batches.
Add half a cup of boiled water and 1.5 cups of TVP to a bowl and set aside.
Add your black beans to the food processor and blend until mostly smooth.
Add the mixture to a large bowl, add your TVP and oats, and mix well to combine.
Divide the mixture into 12 burger patties.
Crush each patty between your hands to make it denser, then form it into a burger shape and add it to a lined baking sheet.
Freeze your burger patties. Once frozen, store them in a large plastic bag in the freezer.
Reheat each patty in the microwave for 2-3 minutes or let it thaw at room temperature for 1-2 hours before pan frying.
