Vegan Arugula Walnut Pesto (oil free)
This pesto takes 5 minutes to make and is a great way to sneak in a load of veggies! It has a tangy, zetsy, nutty flavor and is great as a pasta sauce, dip or spread.

- 3 cups Packed Arugula
- ½ cup Walnuts
- 2 tbsp Nutritional Yeast
- 2 tbsp Lemon Juice
- ¼ cup Almond Milk or any other plant milk
- ½ tsp Garlic Powder
- 1 tsp Onion Powder
- 1-2 tbsp Olive Oil optional
- ¼ tsp Salt
- ¼ tsp Pepper
Add all of your ingredients into a blender and blend until smooth. I like to keep a few small chunks in the pesto so I blend until it's mostly smooth, but this it up to you!
Use as a pasta sauce or spread on your toast!
