How to make Vegan Arugula Walnut Pesto (oil free):

To make this 5 minute pesto all you need to do is toss the ingredients into a blender. You can use any blender it does not need to be a vitamix or high speed blender. There is a lot of arugula in this recipe but it blends down to about one scant cup. Blend until smooth. I like to leave a few chunks in my pesto but the consistency is totally up to you!

What can I use this Pesto for?

My favorite way to use this Pesto is as a pasta sauce! I love frying up some onions, mushrooms and cherry tomatoes and tossing it with some whole wheat pasta and pesto! Absolute heaven! You can use this pesto to spread on your toast in the morning or add it to a sandwich for extra flavor! You can also stir your pesto into a soup, use it as a dip for veggies, drizzle it on top of some roasted veggies, or mix it into some mashed potatoes!

Substitutions:

  • Omit oil if you want this recipe to be oil free.

Ingredients
  

  • 3 cups Packed Arugula
  • ½ cup Walnuts
  • 2 tbsp Nutritional Yeast
  • 2 tbsp Lemon Juice
  • ¼ cup Almond Milk or any other plant milk
  • ½ tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1-2 tbsp Olive Oil optional
  • ¼ tsp Salt
  • ¼ tsp Pepper

Instructions
 

  • Add all of your ingredients into a blender and blend until smooth. I like to keep a few small chunks in the pesto so I blend until it's mostly smooth, but this it up to you!
  • Use as a pasta sauce or spread on your toast!
