Vegan Avocado Egg Rolls
These vegan air fryer egg rolls are crispy on the outside and loaded with avocado toast flavor on the inside! They are made in an air fryer for ultimate crispiness and take less than 20 minutes to make! These rolls are packed with a lemony, everything bagel flavor and are such a fun way to switch up your avo toast!

5 Spring Roll Wrappers 1½ Ripe Avocados ¼ cup Diced Red Onion ⅓ cup Chopped Tomato ⅓ cup Cannellini Beans Juice of half a Lemon 1 tbsp Everything Bagel Seasoning Salt and Pepper to Taste Optional" Sweet Chili Sauce for dipping
Start by making your filling. Roughly slice your avocado and add it in a small bowl.
Chop your onion and tomato and add them in the bowl with the avocado along with the rest of the ingredients. Mash well to combine.
Next assemble your rolls. Place the filling 1/3 of the way from the edge in a line then fold in the sides and roll it up just like a burrito.
Place your rolls into your air fryer and air fry at 400f for 14 minutes until golden and crispy.
If baking you can bake at 400f for 25-30 minutes.
Enjoy as is or dunk your rolls into a sweet chili sauce, vegan sriracha mayo or drizzle on a balsamic glaze!
