How to make avocado egg rolls

First make the filling! To make your air fryer avocado egg rolls first grab a small bowl and add in some chopped avocado, red onion, tomato, cannellini beans, everything bagel seasoning, lemon juice and salt and pepper to taste. Mash that up with the back of a fork and set aside.

Next assemble your rolls. Take one sheet of spring roll paper and place the avocado filling in a line on the 1/3 mark of the paper. Fold in the sides then roll up the wrapper just like a burrito!

Add your rolls into your air fryer and spray with a touch of oil. Air fry at 400f for 12-15 minutes until golden and crispy and enjoy!

Don’t add too much filling! The secret to making perfect rolls is to place the filling 1/3 of the way from the edge. Add a little bit of the filling so that when your roll the paper every side will have 2 layers of paper. This will ensure that the spring roll paper stays together and the filling does not explode out of the sides!

Make baked avocado egg rolls! If you do not have an air fryer you can bake your avocado egg rolls instead! Pop them into the oven at 400f for 25-30 minutes until golden!

Switch up the filling! You can add in any of your favorite avo toast fillings! Try some balsamic glaze, fresh garlic, or even some broccoli sprouts or sauerkraut!

Make it high in protein! You can make these rolls high in protein by adding in some crumbled tofu or tempeh! You can marinate them in some coconut aminos for a sweet and salty flair or add them in plain!

How to eat your vegan avocado egg rolls

As an appetizer! These make for the perfect quick and easy appetizer and is sure to wow any of your friends or family!

As a snack or lunch! These rolls are perfect if you’re craving some avo toast but want to switch it up!

With a sauce! I served my rolls with a sweet chili sauce but you could also use sriracha mayo, an Asian sauce or drizzle on a balsamic glaze!

Ingredients
  

  • 5 Spring Roll Wrappers
  • Ripe Avocados
  • ¼ cup Diced Red Onion
  • cup Chopped Tomato
  • cup Cannellini Beans
  • Juice of half a Lemon
  • 1 tbsp Everything Bagel Seasoning
  • Salt and Pepper to Taste
  • Optional" Sweet Chili Sauce for dipping

Instructions
 

  • Start by making your filling. Roughly slice your avocado and add it in a small bowl.
  • Chop your onion and tomato and add them in the bowl with the avocado along with the rest of the ingredients. Mash well to combine.
  • Next assemble your rolls. Place the filling 1/3 of the way from the edge in a line then fold in the sides and roll it up just like a burrito.
  • Place your rolls into your air fryer and air fry at 400f for 14 minutes until golden and crispy.
  • If baking you can bake at 400f for 25-30 minutes.
  • Enjoy as is or dunk your rolls into a sweet chili sauce, vegan sriracha mayo or drizzle on a balsamic glaze!
