These big mac vegan taquitos will blow your mind! They are baked in the oven, so they have minimal oil and are ultra crispy! They are topped with a healthy vegan big mac sauce made of cashews you will go crazy for and are loaded with a healthy tofu ground beef! They are perfect for sharing, game day, as a appetizer or to switch up your taco Tuesday!
First make your tofu ground beef. Press your tofu to release the liquid then crumble it into a large bowl. Toss in your seasonings and mix to coat then spread your tofu onto a baking tray and bake at 400f for 30 minutes.
While your tofu is in the oven prepare the big mac sauce by blending the ingredients together in a high speed blender. If you do not have a high speed blender make sure to soak your cashews in boiling water for 10 minutes to soften them so the sauce is nice and smooth,
Once the tofu is finished divide it into your 10 small tortillas and add in some vegan cheese or my healthy homemade vegan cheese sauce - recipe linked above.
Roll up your taquitos nice and tight then place them into a greased baking dish. Bake at 425 for 25 minutes or until golden and crispy.
While the taquitos are in the oven chop up your veggies.
Take your taquitos out of the oven and top with the chopped lettuce, tomatoes, pickles and red onion and drizzle on your big mac sauce!
