These big mac taquitos will blow your mind! They are baked in the oven, so they have minimal oil and are ultra crispy! These taquitos are topped with a healthy vegan big mac sauce made of cashews you will go crazy for and loaded with a healthy tofu ground beef! They are perfect for sharing, game day, as a appetizer or to switch up your taco Tuesday!

How to make your big mac taquitos

This big mac recipe is the ultimate taco night recipe and it takes a few steps to make:

First make your tofu ground beef. Press your extra firm tofu to release all of the liquids. You can do this using a tofu press or by wrapping it in a kitchen towel and placing a heavy object on top. Press for 15 minutes. Crumble your tofu into a large bowl, toss in the seasoning mix and bake until crispy!

Make your big mac sauce. While the beef is in the oven make you big mac sauce in a high speed blender. If you don’t have a high speed blender make sure to soak your cashews in boiling water for 15 minutes to soften them. Just add in the cashews with the rest of the ingredients and blend until completely smooth. This big mac sauce recipe is SO good you’ll want to put it on everything!

Roll and bake your taquitos! Once the tofu beef has finished baking add some of the beef to a small tortilla along with some vegan cheese or cheese sauce. I used my healthy homemade vegan cheese sauce recipe, you can find it here! Roll up your tortillas and place them into a greased baking dish. Pop them in the oven at 425f for 25 minutes or until golden and crispy.

Top your taquitos with shredded lettuce, tomato, red onion and pickles and drizzle on your healthy homemade vegan big mac sauce! Use the extra sauce for dipping and enjoy!

Some tips from Steph

Make them gluten free. You can make your taquitos gluten free by using corn or gluten free tortillas and swapping the soy sauce for a gluten free soy sauce or tamari.

Make ahead of time. You can prepare your tofu beef and big mac sauce ahead of time so all you have to do the day of is roll, bake and chop up your veggies! They will stay good in the fridge for up to one week!

Make it soy free! You can make your taquitos soy free by swapping the soy sauce for salt and swapping the tofu for another protein source. Try making some vegan black bean taquitos or vegan chicken taquitos using a mock meat substitute!

Make a big mac salad! You can omit the tortillas here and make a big mac salad using the sauce and tofu beef!

Make a big mac burrito! You can also wrap your tofu and veggies in a burrito with the big mac sauce and pan fry your tortilla to make it nice and crispy!

Ingredients
  

Tofu Ground Beef

  • 2 400g blocks Extra Firm Pressed Tofu
  • 2 tbsp Soy Sauce
  • 3 tbsp Tomato Paste
  • 1 tbsp Olive Oil or veggie broth
  • 2 tsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tbsp Chili Powder
  • 1 tbsp Smoked Paprika
  • ¼ cup Nutritional Yeast

Big Mac Sauce

For the Taquitos

Instructions
 

  • First make your tofu ground beef. Press your tofu to release the liquid then crumble it into a large bowl. Toss in your seasonings and mix to coat then spread your tofu onto a baking tray and bake at 400f for 30 minutes.
  • While your tofu is in the oven prepare the big mac sauce by blending the ingredients together in a high speed blender. If you do not have a high speed blender make sure to soak your cashews in boiling water for 10 minutes to soften them so the sauce is nice and smooth,
  • Once the tofu is finished divide it into your 10 small tortillas and add in some vegan cheese or my healthy homemade vegan cheese sauce – recipe linked above.
  • Roll up your taquitos nice and tight then place them into a greased baking dish. Bake at 425 for 25 minutes or until golden and crispy.
  • While the taquitos are in the oven chop up your veggies.
  • Take your taquitos out of the oven and top with the chopped lettuce, tomatoes, pickles and red onion and drizzle on your big mac sauce!
