Vegan Breakfast Sausage Patties
You won't believe how much these taste like sausage patties! These TVP based patties have a smoky fennel-y sausage flavor perfect for any breakfast sandwich!

For the Tofu Egg
- 200g Extra firm pressed tofu
- 3 tbsp Soy Sauce
- ¼ tsp Turmeric
- ¼ tsp Kala Namak black salt
For the Breakfast Sandwich
- English Muffins
- Tomato
- Tofu Egg
- Vegan Cheese or sliced avocado
To make the patties start by boiling some water. Mix your TVP and boiling water together and let sit for a few minutes to rehydrate.
Add your TVP to a large bowl with the rest of the ingredients.
Mix well then form 4 patties and pan fry in a little olive oil for a few minutes on each side.
If making the tofu egg, use one large block of extra firm pressed tofu. Use a cup as a cookie cutter to cut the tofu into circle shapes. Mix together the soy sauce, turmeric and kala namak, dunk the tofu circles then pan fry for a few minutes.
Assemble your sandwich with an English muffin, your tofu egg, sliced tomato, vegan cheese and your sausage patty.
