Vegan Breakfast Sausage Patties
These vegan breakfast sausage patties are out of this world and perfect for breakfast sandwiches! These meat free sausages are made with Textured vegetable protein (T.V.P) and a mix of spices! They are the perfect meat substitute for your morning breakfast and taste so incredibly similar to sausage it will blow you away!
Vegan cooking is truly incredible. You learn through experience that it is possible to emulate almost any flavor with a mix of spices! Most of the time the animal based meals we love often taste so good because of the flavor we add to them. The great news is you can add these same flavors to plant based alternatives and achieve the same delicious flavor! Take these sausages as an example!
What ingredients do I need for my vegan breakfast sausage patties
- Textured Vegetable Protein (TVP)
- Oat Flour: Make your own by blending oats in a blender
- Ground Flax
- Nutritional Yeast
- A mix of spices (garlic powder, fennel, smoked paprika)
- Soy Sauce
- Maple Syrup
- Liquid Smoke
How to make vegan breakfast sausage patties
Rehydrate the TVP: TVP, or textured vegetable protein, is this amazing ingredient that is gluten free and super high in protein! It is basically these tiny dried soy pieces that can be rehydrated in boiling water in a mere 5 minutes! TVP can absorb any flavor you give it! It is the perfect ingredient to have in your kitchen arsenal! To rehydrate just add equal parts TVP and boiling water, mix and let sit for a few minutes.
Spice it up: Once your TVP is rehydrated add it to a large bowl with your spices and other ingredients and mix well to combine.
Fry it up: Form your sausage mix into four patties then pan fry in a small amount of oil for a few minutes on each side until golden and crispy.
Assemble: To assemble your patties into a breakfast sandwich toast some English muffins and add some vegan cheese, tomato and a tofu egg (see recipe on how to make a tofu egg). For this sandwich I used my vegan pretzel bagel recipe and turned them into small buns!
Will my non vegan friends and family like this
Although these sausage patties are not 100% identical to pig sausage they truly taste amazing! They have a robust fennel and smoky flavor and are sure to please any crowd! Not to mention they are much healthier and contain zero saturated fat!
Substitutions
- For this recipe I like to use oat flour to sneak in some extra whole grains, but you can sub white, whole wheat or spelt.
- If you cannot find liquid smoke you can get it here! If you do not want to use it you can just add in extra smoked paprika!
- For an oil free recipe bake your patties at 400 degrees f for 25 minutes instead of pan frying.

Ingredients
For the Sausage Patties
- ½ cup TVP textured vegetable protein
- ½ cup Boiling Water
- 1 cup Oat Flour
- 1 tbsp Ground Flax
- 1 tbsp Nutritional Yeast
- 1 tsp Garlic Powder
- ¾ tsp Fennel
- 2 tsp Smoked Paprika
- 3 tbsp Soy Sauce
- 2 tbsp Maple Syrup
- 2 tsp Liquid Smoke
For the Tofu Egg
- 200g Extra firm pressed tofu
- 3 tbsp Soy Sauce
- ¼ tsp Turmeric
- ¼ tsp Kala Namak black salt
For the Breakfast Sandwich
- English Muffins
- Tomato
- Tofu Egg
- Vegan Cheese or sliced avocado
Instructions
- To make the patties start by boiling some water. Mix your TVP and boiling water together and let sit for a few minutes to rehydrate.
- Add your TVP to a large bowl with the rest of the ingredients.
- Mix well then form 4 patties and pan fry in a little olive oil for a few minutes on each side.
- If making the tofu egg, use one large block of extra firm pressed tofu. Use a cup as a cookie cutter to cut the tofu into circle shapes. Mix together the soy sauce, turmeric and kala namak, dunk the tofu circles then pan fry for a few minutes.
- Assemble your sandwich with an English muffin, your tofu egg, sliced tomato, vegan cheese and your sausage patty.
