This chickpea salad is so quick and easy you will want to make it every day! The chickpeas are spiced with Mediterranean flavor and the salad drizzled with a lemon tahini dressing. This light and refreshing salad is perfect for summer!
Heat your olive oil in a pan then add in your can of strained chickpeas, lemon juice and spices. Cook for 5 minutes over medium heat until slightly crisped and heated through.
While the chickpeas are cooking prepare your veggies and toss them in your bowl.
Make your lemon tahini dressing by adding all ingredients into a jar. Add water as needed to thin the dressing and shake until combined. Alternatively you can add ingredients into a bowl and whisk to combine.
Assemble your salad with your chopped veggies, Medi spiced chickpeas and lemon tahini dressing and enjoy!
