This chickpea shawarma salad is so delicious, easy and perfect for summer! The chickpeas are spiced with Mediterranean flavor and the salad topped with a light and refreshing lemon tahini dressing. The perfect combo! This salad is great for a quick lunch or dinner and can even be made for meal prep!

What ingredients do I need for my chickpea shawarma salad?

For the Mediterranean flavored chickpeas you will need chickpeas, olive oil, lemon juice and a mix of spices.

For the salad you will need lettuce, parsley, cucumber, tomato, pickles and red onion.

To make the lemon tahini dressing you will need tahini, lemon juice and maple syrup.

How to make this chickpea shawarma salad

This chickpea salad is so easy to make you will want to have it every day for lunch!

Make your chickpeas by heating up some olive oil in a pan. Add in your chickpeas, spices, lemon juice and a touch of salt and pepper and pan fry until slightly crisped and heated through.

Prepare your salad. While the chickpeas are cooking prep your veggies and add to your bowl.

Make the lemon tahini dressing. Make the dressing by adding the ingredients into a jar and shaking well until combined. Add in water as needed to thin the dressing to your desired consistency.

Assemble and enjoy! Add your Medi chickpeas on top of the salad along with a nice drizzle of your lemon tahini dressing and enjoy!

Substitutions/Additions

Make this high protein by swapping the chickpeas for tofu or tempeh!

To make this salad more filling add in some rice, quinoa or potatoes!

Ingredients
  

For the Chickpeas

  • 1 can Chickpeas strained
  • ½ tbsp Olive Oil
  • Squeeze of lemon
  • 1 tsp Cumin
  • ½ tsp Cinnamon
  • tsp Paprika
  • ½ tsp Garlic Powder
  • ½ tsp Ginger

For the Salad

  • 6 cups Lettuce
  • ½ cup Parsley roughly chopped
  • ¼ Cucumber
  • 1 Medium Tomato
  • ¼ cup Chopped Pickles
  • ¼ Red Onion thinly sliced

Lemon Tahini Dressing

  • ¼ cup Tahini
  • Juice of 1 lemon
  • 1-2 tbsp Maple Syrup to taste
  • Water as needed to thin
  • Salt to taste

Instructions
 

  • Heat your olive oil in a pan then add in your can of strained chickpeas, lemon juice and spices. Cook for 5 minutes over medium heat until slightly crisped and heated through.
  • While the chickpeas are cooking prepare your veggies and toss them in your bowl.
  • Make your lemon tahini dressing by adding all ingredients into a jar. Add water as needed to thin the dressing and shake until combined. Alternatively you can add ingredients into a bowl and whisk to combine.
  • Assemble your salad with your chopped veggies, Medi spiced chickpeas and lemon tahini dressing and enjoy!
