Vegan Chickpea Tuna Melt {15 Minute Recipe}

This chickpea tuna is so easy to make and tastes just like tuna! It is a perfect quick and easy lunch idea with only 8 ingredients. This chickpea tuna can be eaten on its own, on buddha bowls or in sandwiches!

Ingredients
  

  • 1 can Chickpeas strained and rinsed
  • ½ cup Pickles chopped
  • ½ Small Red Onion diced
  • 1 tbsp Capers chopped
  • 2 tsp Sriracha
  • 2 tbsp Vegan Mayo
  • Juice of 1 Lemon
  • 3 sheets Nori
  • 4 slices Bread
  • 2 slices Vegan Cheese

Instructions
 

  • Strain and rinse your chickpeas then add to a large shallow baking dish.
  • Add in the rest of the ingredients then mash with the back of a fork.
  • Assemble your chickpea tuna melt with some bread, vegan cheese and your chickpea tuna.
  • Optional - Add in some tomatoes & sprouts
  • Panfry until golden on both sides.
