Vegan Chickpea Tuna Melt {15 Minute Recipe}
This chickpea tuna is so easy to make and tastes just like tuna! It is a perfect quick and easy lunch idea with only 8 ingredients. This chickpea tuna can be eaten on its own, on buddha bowls or in sandwiches!

1 can Chickpeas strained and rinsed ½ cup Pickles chopped ½ Small Red Onion diced 1 tbsp Capers chopped 2 tsp Sriracha 2 tbsp Vegan Mayo Juice of 1 Lemon 3 sheets Nori 4 slices Bread 2 slices Vegan Cheese
Strain and rinse your chickpeas then add to a large shallow baking dish.
Add in the rest of the ingredients then mash with the back of a fork.
Assemble your chickpea tuna melt with some bread, vegan cheese and your chickpea tuna.
Optional - Add in some tomatoes & sprouts
Panfry until golden on both sides.
