This chickpea tuna melt is insanely delicious and so quick to make! It is the perfect easy lunch and you won’t believe how much it tastes like tuna! This Chickpea tuna can be used in a sandwich, salad, Buddha bowl or eaten by itself, it’s that good!

How to make your chickpea tuna melt

This chickpea tuna melt is so simple to make you’ll be eating in less than 15 minutes!

Strain and rinse your chickpeas. Then add them into a shallow baking dish. It will be easier to smash the chickpeas later in a shallow dish rather than a bowl.

Add ingredients & mash. Add in all of your ingredients into the shallow baking dish then mash everything together using the back of a fork or a potato masher.

Melt. To make your tuna melt add your chickpea tuna onto some bread with some vegan cheese then grill it just like a grilled cheese until golden!

How to eat your chickpea tuna

As a chickpea tuna melt. Pan fry your tuna in a sandwich with some melty vegan cheese.

As a chickpea tuna salad. Eat it by itself as a yummy salad!

On top of a Buddha bowl. Add this to your bowls with a yummy dressing on top!

As a meal. You can serve your chickpea tuna with some roasted potatoes and veg or a salad to make a full meal!

Make it a dip! Grab your favorite crackers and veg and use your vegan chickpea tuna as a dip!

Some tips from Steph

Use a blender or a food processor. If you do not want to mash with a fork or a potato masher. This will be quicker although there will not be as much texture. I personally prefer to do it by hand to keep some of that texture!

Be loose with measurements. This recipe is very forgiving! You can add almost any amount of the ingredients and it will still taste amazing! So don’t get too caught up on measurements! For example, I love pickles so I add in a ton of pickles!

No Mayo. If you want this meal without the mayo you can make your own with cashews and water! Blend equal parts water and soaked cashews with a few spices like onion powder, garlic powder and salt and blend until smooth!

Ingredients
  

  • 1 can Chickpeas strained and rinsed
  • ½ cup Pickles chopped
  • ½ Small Red Onion diced
  • 1 tbsp Capers chopped
  • 2 tsp Sriracha
  • 2 tbsp Vegan Mayo
  • Juice of 1 Lemon
  • 3 sheets Nori
  • 4 slices Bread
  • 2 slices Vegan Cheese

Instructions
 

  • Strain and rinse your chickpeas then add to a large shallow baking dish.
  • Add in the rest of the ingredients then mash with the back of a fork.
  • Assemble your chickpea tuna melt with some bread, vegan cheese and your chickpea tuna.
  • Optional – Add in some tomatoes & sprouts
  • Panfry until golden on both sides.
