Add all the ingredients for your lemon bars in a high-speed blender or food processor!
Wash the lemon before zesting and adding it to the blender!
Blend until smooth, scraping down the sides as needed. There may be some lumps, but that is okay if most of the mixture is blended!
Add parchment paper to an 8x8 baking tray or spray with olive oil.
Pour your batter, flatten it with a spoon or spatula, and bake at 350f for 40 minutes.
