How to Make High Protein Vegan Lemon Bars
Prepare the batter
Add all the lemon bar ingredients for your lemon bars in a high-speed blender or food processor! Wash the lemon before zesting and adding it to the blender! Blend until smooth, scraping down the sides as needed. There may be some lumps, but that is okay if most of the mixture is blended!
Prepare the Baking Tray
Prepare an 8×8 baking tray by lining it with parchment paper or spraying it with olive oil and transfer the batter to the tray.
Evenly Spread the Batter
Evenly spread the batter evenly with a spatula or spoon.
Bake Vegan Lemon Bars
Place the tray with the batter in a preheated oven set to 350°F (175°C) and bake for 40 minutes.
Whip Up the High-Protein Icing
While the lemon bars are baking, whip up your high-protein icing by mixing the ingredients in a small bowl until you get an icing-like consistency. Adjust the icing’s thickness to your preference by adding more protein powder for a thicker texture or more coconut yogurt to thin it out. Remember, icing will also firm up once cooled, so it does not have to be super thick!
Cool Down and Apply the Icing
Once baking is complete, let the bars cool completely before spreading the icing over the top. This step is crucial to prevent the icing from melting. It may take an hour or so. Spread the prepared icing over the cooled bars.
Final Touch and Serving
For an elegant finish, sprinkle extra lemon zest on the bars. Slice the bars into desired portions and enjoy the delightful and protein-rich treat.

The flavor is masked by lemon, almond butter, and icing, resulting in a tangy and sweet flavor. Trust me; you can’t taste them! They would fool anyone! Using chickpeas in lemon bars provides added protein and nutrients, making them a healthier alternative to traditional recipes.
