These vegan seitan chicken nuggets are crispy on the outside and meaty on the inside. They are seasoned to taste like chicken, you will not believe how realistic they are! These vegan chicken nuggets are perfect as a shareable snack, to have on game day or to make for your kids!
First add in all of the ingredients for the seitan nuggets (except for the vegetable broth) into a blender or food processor and pulse to break up the beans and mix everything together.
Once everything is combined add in the veggie broth and pulse again until everything comes together.
Transfer the dough onto a counter and knead for a few minutes. Roll the dough into a long log and slice it with a knife to make nugget sized pieces. Shape the nuggets into your desired size.
Add your nuggets into a pot of chicken flavored vegetable broth and boil for 30 minutes.
Meanwhile make your flour mix by mixing the ingredients into a bowl.
Add breadcrumbs into another bowl and plant milk in another.
Once the nuggets have finished boiling dunk them into the plant milk, then into the flour mixture, back into the plant milk, and lastly into the breadcrumbs.
Place your nuggets onto a baking tray and bake at 425f for 20-25 minutes until golden.
Alternatively you can air fry your nuggets in batches at 400f for 12-15 minutes. I found the nuggets were much crispier when cooked in the air fryer.
Dunk in ketchup, vegan ranch or BBQ sauce and enjoy!
