How to make seitan chicken nuggets

This vegan chicken nuggets recipe takes a few steps to make but trust me they’re worth it!

First make the seitan chicken! Add all of the chicken ingredients (except for the vegetable broth) into a high speed blender or food processor and blend until combined. Next, add in the broth and pulse a few times for it to come together.

Roll your dough onto a counter and knead it for a few minutes. Roll it into a long log and slice it to make chicken nugget shapes! Mold the dough with your hands to make your desired shape.

Boil your nuggets in some veggie broth for 30 minutes.

Next make your batter. You’ll need one bowl of flour and spices, one bowl of plant milk and one bowl of panko breadcrumbs. Once the nuggets have cooked, dunk them into the milk, coat in the flour mix, dunk them back into the milk, and lastly into the breadcrumbs.

Spread your nuggets onto a baking tray and bake at 425f for 20-25 minutes until golden. Alternatively you can air fry them in batches at 400f for 12-15 minutes. I prefer the air fried nuggets as they come out crispier faster although you do have to make them in batches.

Some tips from Steph

Use whole wheat flour if possible! I love to sneak in some whole grains wherever possible to get in some extra fiber and nutrients. If you do not have whole wheat flour you can also use white.

Make sure to boil the seitan chicken nuggets in vegetable broth. If you boil them in water they will lose a lot of their flavor!

Dunk your nuggets in some ketchup, vegan ranch dressing, sweet and sour sauce, BBQ sauce, or some warm tomato sauce.

Use a chicken flavored vegetable broth for an extra chicken-y flavor! I use the one from Better than Bullion!

Eat your nuggets the same day! These nuggets are best eaten the same day as they tend to dry out overnight.

Ingredients
  

Seitan Nuggets

  • 1 cup White Beans
  • 2 cups Vital Wheat Gluten
  • cup Nutritional Yeast
  • 1 tsp Poultry Seasoning
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 2 tsp Paprika
  • ¾ tsp Salt
  • 1 cup Vegetable Flavored Chicken Broth
  • 10 cups Vegetable Flavored Chicken Broth or Veggie Broth – can do half broth & half water, or salted water.

Flour Mix

  • 1 cup Whole Wheat Four
  • 2 tsp Cornstarch
  • 2 tsp Paprika
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 2 tsp Parsley
  • ¼ tsp Salt
  • ¼ tsp Pepper

Breadcrumbs & Plant Milk

  • cups Panko Breadcrumbs
  • cups Plant Milk

Instructions
 

  • First add in all of the ingredients for the seitan nuggets (except for the vegetable broth) into a blender or food processor and pulse to break up the beans and mix everything together.
  • Once everything is combined add in the veggie broth and pulse again until everything comes together.
  • Transfer the dough onto a counter and knead for a few minutes. Roll the dough into a long log and slice it with a knife to make nugget sized pieces. Shape the nuggets into your desired size.
  • Add your nuggets into a pot of chicken flavored vegetable broth and boil for 30 minutes.
  • Meanwhile make your flour mix by mixing the ingredients into a bowl.
  • Add breadcrumbs into another bowl and plant milk in another.
  • Once the nuggets have finished boiling dunk them into the plant milk, then into the flour mixture, back into the plant milk, and lastly into the breadcrumbs.
  • Place your nuggets onto a baking tray and bake at 425f for 20-25 minutes until golden.
  • Alternatively you can air fry your nuggets in batches at 400f for 12-15 minutes. I found the nuggets were much crispier when cooked in the air fryer.
  • Dunk in ketchup, vegan ranch or BBQ sauce and enjoy!
