This Vegan Spicy Tuna roll is a vegan take on the classic sushi that brings together savory and spicy chickpea tuna encased in a blanket of nori sheets followed by sushi rice, tomatoes, avocados, and a sprinkle of sesame seeds. This chickpea tuna roll will satisfy your sushi cravings while offering a unique plant-based twist.
First, make your chickpea tuna. Finely chop your pickles, onion, and capers and add them into a shallow dish along with the rest of your chickpea tuna ingredients. Use a fork to mash the chickpeas together with the rest of your ingredients.
Cook your sushi rice according to the package directions, then let it cool to room temperature. If you are in a rush, you can spread the rice out on a plate and place it in the fridge.
Assemble your sushi by spreading your rice out onto ¾ of your nori sheet. Add in your spicy chickpea tuna, sliced tomatoes, sliced avocado, and sesame seeds.
Roll up your sushi and wet the end of the nori sheet so it sticks together.
