Let’s prepare the spicy chickpea tuna first. Finely chop your pickles, onion, and capers and add them to a shallow dish with the rest of your chickpea tuna ingredients. Use a fork to mash the chickpeas together with the rest of your ingredients.

Cook the Sushi Rice

Cook the sushi rice according to the package directions, then let it cool to room temperature. If you are in a rush, you can spread the rice on a plate and place it in the fridge.

Assemble the sushi by spreading your rice out onto ¾ of your nori sheet. Add in your spicy chickpea tuna, sliced tomatoes, sliced avocado, and sesame seeds.

Starting from the end with the toppings, tightly roll the nori sheet over the filling. Wet the end of the nori sheet with a little water to seal it together.

  • You can use a sushi mat if you prefer, but you can also just use your hands and roll it up just like a burrito!
  • Use a food processor to make the chickpea tuna to save time. You can also mash with a potato masher or using the back of a fork.

For the Spicy Tuna

  • 1 can chickpeas
  • 1/2 cup chopped pickles
  • 1/2 diced red onion
  • 2 tbsp chopped capers
  • 2 tsp sriracha
  • 2 tbsp vegan mayo
  • 1 lemon juice
  • 2 nori sheets shredded

For the Rolls

  • 4 cups cooked sushi rice
  • 8 nori sheets
  • 3 tomatoes sliced
  • 2 avocados
  • 2 tbsp sesame seeds

Instructions
 

  • First, make your chickpea tuna. Finely chop your pickles, onion, and capers and add them into a shallow dish along with the rest of your chickpea tuna ingredients. Use a fork to mash the chickpeas together with the rest of your ingredients.
