Vegan Sushi Burger

This vegan sushi burger is the perfect swap for your burger or sushi night! You can add in any toppings you'd like and its a dish that will WOW any family member or friend! This sushi burger is filled with teriyaki tofu , veggies and a vegan sriracha mayo! It tastes just like sushi but is much more fun to eat!

Ingredients
  

  • 2 cups Sushi Rice uncooked
  • 1 block Extra Frim Tofu pressed
  • 2 tsp Cornstarch
  • 3 tbsp Tariyaki Sauce
  • 1 Avocado sliced
  • ¼ Large Cucumber sliced into ribbons
  • ½ Mango julienned
  • 1 sheet Nori sliced into squares
  • 1 tbsp Vegan Sriracha Mayo

Instructions
 

  • First cook your sushi rice then let it cool to room temperature.
  • While the rice is cooking prepare your tofu. Slice your tofu lengthwise then brush it with corn starch and air fry for 12 minutes flipping halfway through. Brush with teriyaki sauce and set aside.
  • Once your rice is cooled form it into 4 bun shapes. Wet your hands to ensure the rice doesn't stick to your hands. Form the rice into large thin buns, this will make the burger easier to eat! You may have some rice left over.
  • Slice up your veggies and add all of the ingredients into the rice bun.
  • Enjoy on its' own or dunk in some soy sauce!
