How to make your vegan sushi burger

First cook your sushi rice. I cooked 2 cups of dry rice with 2.25 cups of water which was enough for 2 large burgers. There was about a half cup of leftover rice.

Next, let your rice cool to room temperature so you can mold the rice with your hands.

Prepare your tofu while the rice is cooking. Press your tofu for at least 15 minutes using either a tofu press or by wrapping it in a kitchen towel and placing some heavy objects on top. Slice your tofu lengthwise to form a large tofu ‘patty’ then brush with some cornstarch and air fry for 12 minutes flipping halfway through. Toss in some teriyaki sauce and set aside.

Wet your hands and mold your rice into burger buns. Wetting your hands will ensure the rice doesn’t stick to your hands. Squish the rice inside your hands and condense it into a ball then form it into burger buns. It’s best to form them into large thin pieces. This makes it easier to eat the burgers.

Slice up your veggies and prepare the rest of your ingredients to add inside of the burger.

Assemble your burger. I used vegan sriracha mayo, teriyaki tofu, nori, sesame seeds, avocado, mango and cucumber, but you can use any toppings you’d like!

Some tips from Steph

Use whole wheat sushi rice. This recipe would work just as good with a whole wheat sushi rice and would add in some extra whole grains and nutrients!

Make your own sriracha mayo using my recipe here! It is made with cashews and good-for-you ingredients!

Use any toppings you’d like! Use any fruits, veggies or other ingredients you’d usually add into your sushi!

Wet your hands before molding the buns. Using wet hands will ensure that the rice does not stick to your hands! Wet them in between molding each bun!

Make the buns large and thin. This will make the burgers easier to eat!

Ingredients
  

  • 2 cups Sushi Rice uncooked
  • 1 block Extra Frim Tofu pressed
  • 2 tsp Cornstarch
  • 3 tbsp Tariyaki Sauce
  • 1 Avocado sliced
  • ¼ Large Cucumber sliced into ribbons
  • ½ Mango julienned
  • 1 sheet Nori sliced into squares
  • 1 tbsp Vegan Sriracha Mayo

Instructions
 

  • First cook your sushi rice then let it cool to room temperature.
  • While the rice is cooking prepare your tofu. Slice your tofu lengthwise then brush it with corn starch and air fry for 12 minutes flipping halfway through. Brush with teriyaki sauce and set aside.
  • Once your rice is cooled form it into 4 bun shapes. Wet your hands to ensure the rice doesn't stick to your hands. Form the rice into large thin buns, this will make the burger easier to eat! You may have some rice left over.
  • Slice up your veggies and add all of the ingredients into the rice bun.
  • Enjoy on its' own or dunk in some soy sauce!
