Vegan Sweet Potato Pancakes {easy 5 ingredients}

These fluffy vegan sweet potato pancakes are so delicious and easy to make! They require 5 pantry staples and can be made in 20 minutes or less. They are also gluten free, dairy free and refined sugar free! The perfect sneakily healthy weekend breakfast!

Ingredients
  

  • 1 cup Mashed Sweet Potato about 1 medium sweet potato
  • 2 cups Oat Flour
  • 2 tsp Baking Powder
  • ¼ tsp Salt
  • cups Plant Milk
  • 2 tbsp Maple Syrup

Instructions
 

  • Cook your sweet potato. Stab about 20 holes all around your potato then microwave for 5 minutes flipping halfway. You will know it is cooked when you can stab it all the way through with a fork.
  • You can also bake the sweet potato by wrapping it in foil and baking for 50 minutes to 1 hour at 400 degrees f.
  • While the sweet potato is in the microwave mix together your dry ingredients.
  • Add in your cooked sweet potato, plant milk and maple syrup and mix well.
  • Pan fry your pancakes over medium heat until golden and serve!
