These vegan sweet potato pancakes are a show stopper! They are made with 5 simple ingredients you likely already have in your pantry! They are naturally sweetened with maple syrup and are oh so fluffy! This is the perfect way to sneak in some sweet potato for some extra fiber to keep you full throughout the day! These pancakes are not only delicious but are also gluten free, dairy free and refined sugar free!

How to make vegan sweet potato pancakes

This is the easiest sweet potato pancake you will ever make! All you need is 5 ingredients and about 20 minutes!

Cook your sweet potato. The easiest way to cook your sweet potato is by using the microwave. Grab a fork and stab about 20 holes all around the sweet potato. Place it on a plate and microwave for 5 minutes flipping halfway through. You’ll know it is done when you can stab it all the way through with a fork.

You can also use the oven. If you do not have a microwave or simply don’t like using them you can also wrap the sweet potato up in foil and bake for 50 min – 1 hour at 400 degrees f.

Make the batter. While the potato is cooking mix together your dry ingredients. Then add in your cooked sweet potato, plant milk and maple syrup and mix until well combined.

Pan fry over medium heat until golden then add any toppings you like!

How to eat your vegan sweet potato pancakes

I ate these vegan sweet potato pancakes with a banana and drizzled them with some powdered peanut butter to make them high protein. You can also try these toppings:

  • Make an epic vegan pancake board perfect for a Sunday brunch!
  • Top with some coconut whipped cream or drizzle with some maple syrup or vegan yogurt.
  • Add some fresh fruit on top or some nuts for crunch.
  • Add in some cinnamon or pumpkin spice for an autumn flare.
  • Make them savory by drizzling on some of my healthy vegan cheese sauce or them add to a breakfast board with some vegan breakfast sausage and tofu scramble!

Don’t have oat flour? Make your own by blending up some rolled oats in a high speed blender or food processor! You can also use gluten free flour, all purpose, or spelt although you may need to adjust the amount of plant milk added since oat flour is quite dense.

Make them sugar free. You can omit the maple syrup if you do not want any added sugar. The sweet potatoes are quite sweet themselves and the pancakes will still taste amazing!

Swap the sweetener with any other sweetener you’d like. Any liquid or dry sweetener will work great!

Gluten free. These pancakes are naturally gluten free since oats are usually gluten free. If you are very strict opt for a certified gluten free brand of oats, as oats may have some cross contamination in the processing plant. However, this is not something I worry about normally.

Storing your pancakes

These vegan gluten free sweet potato pancakes are best eaten right away although you can keep them in the fridge for up to 3 days. Try freezing your pancakes and reheating them in the microwave, oven, or toaster!

Ingredients
  

  • 1 cup Mashed Sweet Potato about 1 medium sweet potato
  • 2 cups Oat Flour
  • 2 tsp Baking Powder
  • ¼ tsp Salt
  • cups Plant Milk
  • 2 tbsp Maple Syrup

Instructions
 

  • Cook your sweet potato. Stab about 20 holes all around your potato then microwave for 5 minutes flipping halfway. You will know it is cooked when you can stab it all the way through with a fork.
  • You can also bake the sweet potato by wrapping it in foil and baking for 50 minutes to 1 hour at 400 degrees f.
  • While the sweet potato is in the microwave mix together your dry ingredients.
  • Add in your cooked sweet potato, plant milk and maple syrup and mix well.
  • Pan fry your pancakes over medium heat until golden and serve!
