1 lb. mini Yukon gold potatoes halved 1 tablespoon olive oil 4 tablespoons fresh chopped Parsley 3 cloves garlic Salt & pepper to taste 1.5 cups grated vegan Parmesan
Slice your mini potatoes in half, then score the middle by making a few slits horizontally and vertically.
Add the potatoes to a large bowl and toss with olive oil, fresh chopped parsley, crushed garlic, salt, and pepper.
Grate 1 cup of vegan Parmesan into the bottom of your lined baking dish.
Add the potatoes on top of the cheese, sliced side down, then top with another half cup of grated parm.
Bake at 425f for 35 minutes or until golden and serve!
