Ingredients
  

  • 1 lb. mini Yukon gold potatoes halved
  • 1 tablespoon olive oil
  • 4 tablespoons fresh chopped Parsley
  • 3 cloves garlic
  • Salt & pepper to taste
  • 1.5 cups grated vegan Parmesan

Instructions
 

  • Slice your mini potatoes in half, then score the middle by making a few slits horizontally and vertically.
  • Add the potatoes to a large bowl and toss with olive oil, fresh chopped parsley, crushed garlic, salt, and pepper.
  • Grate 1 cup of vegan Parmesan into the bottom of your lined baking dish.
  • Add the potatoes on top of the cheese, sliced side down, then top with another half cup of grated parm.
  • Bake at 425f for 35 minutes or until golden and serve!
