These pumpkin spice pancakes are the perfect fall breakfast! They are super fluffy, loaded with whole grains and are refined sugar free and dairy free! They are made with simple ingredients and will leave you feeling full and satisfied all morning long!
Add all of your ingredients into a large bowl and mix to combine. Careful not to overmix or this will make the pancakes flat!
Leave the batter to sit for 5 minutes.
In the meantime make your caramelized apple by chopping it up and cooking it over medium heat with some cinnamon and water as needed to de glaze the pan. Cook until the apple is soft, about 5 minutes.
Heat your pan to medium heat while the pancake batter sits. Then pan fry each pancake for a few minutes on each side until golden.
I mix my vegan yogurt with a scoop of vegan vanilla protein powder but this is optional. Top with your protein yogurt and caramelized apples and enjoy!
