Fluffy Pumpkin Spice Pancakes {vegan & diary free}
These vegan pumpkin spice pancakes are the perfect fall breakfast! They are made with 6 simple ingredients and are naturally sweetened with minimal added sugar! You will not believe these sweet spiced pancakes are vegan and healthy! They will keep you full for hours and are so fluffy and satisfying!
What ingredients do I need for my pumpkin spice pancakes
- Oat Flour
- Pumpkin Puree
- Baking Powder
- Pumpkin Pie Spice
- Maple Syrup
- Plant Milk
How to make pumpkin spice pancakes
Mix your batter together in a large bowl but be careful not to overmix or they will be flat!
Pan fry your pumpkin pancakes over medium heat for a few minutes on each side until golden.
Toppings. I like to add caramelized apples on top of these pancakes along with an easy vegan protein icing! Just sauté your apple with cinnamon and water to deglaze the pan as needed and mix together vegan yogurt and protein powder to make the high protein icing! Try my homemade vegan yogurt recipe here!
Some tips from Steph
Do not over mix the batter! This kills the baking powder and makes the pancakes flat!
Use any plant milk for this recipe! Your favorite plant milk will work! I like making my own with my Almond Cow!
Gluten free. These pumpkin pancakes are already naturally gluten free but if you are very strict make sure to get certified gluten free oats!

Fluffy Pumpkin Spice Pancakes {vegan & diary free}
Ingredients
For Pancakes
- 1 cup Oat Flour
- ½ cup Pumpkin Puree
- 1 tbsp Baking Powder
- 1 tbsp Pumpkin Spice
- 1 tbsp Maple Syrup
- 1¼ cup Plant Milk
For Topping
- ¼ cup Vegan Yogurt
- 1 scoop Vegan Vanilla Protein Powder
- 1 Apple sautéed with cinnamon & water
Instructions
- Add all of your ingredients into a large bowl and mix to combine. Careful not to overmix or this will make the pancakes flat!
- Leave the batter to sit for 5 minutes.
- In the meantime make your caramelized apple by chopping it up and cooking it over medium heat with some cinnamon and water as needed to de glaze the pan. Cook until the apple is soft, about 5 minutes.
- Heat your pan to medium heat while the pancake batter sits. Then pan fry each pancake for a few minutes on each side until golden.
- I mix my vegan yogurt with a scoop of vegan vanilla protein powder but this is optional. Top with your protein yogurt and caramelized apples and enjoy!
