These pulled pork flautas are perfect for sharing and are SO good you won't believe they are vegan! This recipe uses shredded tofu and jackfruit to achieve the most realistic high protein meaty texture! The flautas are topped with an easy mayo-free homemade coleslaw and dunked in my healthy vegan sriracha recipe which is the perfect tangy addition to these smoky flautas!
First prep your ingredients. Chop up your onion and garlic. Press your tofu to release the liquid then grate using a cheese grater. Cut the hard core off of the jackfruit and pull the jackfruit apart with your hands.
Next sauté your onion for a few minutes until translucent then toast your garlic for one minute. Add in the rest of the ingredients and mix well to combine. Cook for 3-5 minutes until heated through then set aside.
Add the mixture to your tortillas along with a sprinkle of vegan cheese. Roll up the tortillas then place them into your greased air fryer basket.
Air fry at 450 for 15 minutes until golden. You can also bake at 425f for 30-40 minutes.
Meanwhile make your coleslaw. Add the avocado, maple syrup, lemon juice, and salt and pepper to a bowl and mash with a fork. Add water to thin then mix in your coleslaw mix.
Make the healthy vegan sriracha mayo if you'd like to use this as a dip (highly recommend!)
Top your flautas with the coleslaw, dip in your mayo and enjoy!
