This vegan strawberry rhubarb crisp is the perfect healthy dessert! It is made with completely whole foods and is dairy free, oil free and refined sugar free! If you're looking for a healthy vegan dessert that leaves you feeling amazing then this recipe is for you! It is simple to make and is paired with fresh thyme for an herby sweet combo you are sure to love!
First wash and chop up your strawberries and rhubarb. Give them a rough chop then place them into a 9 inch pie pan or baking dish.
Add in the lemon juice and maple syrup and mix to combine.
Next, make your crumble. Add all of the ingredients into a large bowl and mix with a spoon to combine.
Add your crumble on top of the strawberry rhubarb mixture and spread it evenly over the top.
Bake at 350f for 30 minutes until the top is golden.
Serve with some fresh thyme - I highly recommend you do not omit this! It adds a glorious well rounded flavor! You can also top it with some vegan vanilla ice cream or yogurt or my high protein vegan icing (recipe linked above).
