It is super sweet and satisfying and such a fun way to get in your protein! You can use it as a topping for oats or pancakes or eat it by the spoonful (my favorite way)! It is so easy to make and each serving has 27 grams of plant protein! You will be obsessed once you try this!

What ingredients do I need for my protein icing

How to make protein icing

One of the reasons I love this protein icing so much is because of how easy it is to make! All you need is 5 minutes and you’re ready to enjoy!

Blend together your tofu, lemon juice and water until smooth. I use my Vitamix for everything it is so powerful and pulverizes anything you throw in it! I used to go through 2 blenders a year until I invested in my Vitamix! It’s one of my favorite must have kitchen appliances!

Mix in your protein. This tofu mix makes enough for 4 large servings. I like to pour out a quarter at a time and mix in one scoop of protein powder as needed. Add water as needed to thin out the icing until it mixes into a smooth and creamy consistency.

How to use protein icing

Eat it straight off the spoon! This protein powder icing is my favorite healthy high protein snack that is low in calories! It is so sweet and satisfying and makes for a great quick and easy healthy dessert or late night snack!

Add it on top of your oatmeal! I add this icing on top of my oatmeal almost every morning! It’s a great way to bump up the protein content of your oats! I was never really a fan of mixing protein powder into oats, I think the flavor is too overpowering. But adding this protein icing on top on the other hand… absolute perfection!

Use it for waffles, pancakes or crepes! It’s another great way to bump up the protein content of your breakfast and add a touch of sweetness! Yum!

Ice your cupcakes or muffins! It’s a much healthier alternative and contains no added sugar!

Some tips from Steph

Use silken of medium tofu. Any tofu will work with this protein icing! Just make sure to use less water. For silken and soft tofu do not add any water at all. Just blend with the lemon juice. The softer the tofu the more water it contains already so no need to add extra!

Make chocolate icing! Just swap your vanilla protein powder for chocolate and add in some extra cacao powder to taste if needed! My favorite protein is from Outcast Foods you can use my affiliate code VEGANBABE to save 10% at checkout!

Make peanut butter icing! Mix in some natural peanut butter or some powdered peanut butter for a higher protein option!

Make sure to use a protein powder that you love! This is what gives the protein icing it’s flavor so make sure you love the taste of the protein!

Add some lemon zest for an even more intense lemon flavor!

Prep it ahead of time! I like to blend up the whole block of tofu and mix in protein as needed. It’s best to mix the protein in as you are about to eat it as it doesn’t keep as well in the fridge once mixed. Each block makes 4-5 servings depending on how big you like them! You can also make a smaller batch or make one serving at a time in a small blender.

Store your tofu lemon mix in the fridge for up to 3 days and mix in protein powder as needed for each serving.

Instructions

  • Crumble the tofu into large chunks and add to your blender along with the lemon juice and water. Blend until completely smooth.
  • Divide the tofu lemon mix into 4 or 5 servings.
  • For each portion mix in one scoop of protein powder and add water as needed to thin it out until it becomes a thick creamy consistency.
  • Store the rest of the mixture in the fridge until you are ready to enjoy it. Mix in the protein as you eat it as it keeps better in the fridge this way.
  • Try out some different flavors! Mix in chocolate protein, powdered peanut butter, or some nut butter to flavor your icing!

Notes

If using silken or soft tofu add much less water since they have a much higher water content. For one block of silken tofu use up to a third of a cup, depending on what type of consistency you’d like. Keep in mind the icing will be much smoother and thinner as well.
