How to make your vegan strawberry rhubarb crisp

This will be one of your favorite vegan rhubarb recipes! It takes less than 10 minutes of prep time and is so easy to make!

First wash and chop your strawberries and rhubarb. A rough chop will do here! Just chop it up and toss it into your pie pan! I used a 9 inch pie pan but you can use a baking dish as well!

Once your fruit is chopped add on some maple syrup and a squeeze of lemon juice. Mix it up and set aside.

Next, make your crumble in a bowl. Just add everything into your bowl and mix until well combined.

Add your crumble on top of the strawberry and rhubarb mixture. Spread it out over the entire pie pan as evenly as possible.

Bake your strawberry rhubarb crumble in the oven at 350f for 30-35 minutes until golden then top with some fresh thyme and enjoy!

Some tips from Steph

Make it nut free! You can make your vegan strawberry rhubarb crisp nut free by swapping the almond butter for a nut free alternative such as sun butter or tahini. You could also use a third cup of olive oil or coconut oil in place of the nut butter. Swap the chopped pecans and almond flour for half a cup of extra oats and half a cup of extra oat flour.

Omit the maple syrup. If you prefer your vegan rhubarb pie to be made without any added sugar you can simple omit the maple syrup. It will not be as sweet, but will still have a slight sweetness from the strawberries and rhubarb!

Sub the almond flour for coconut flour or oat flour if you cannot find any. If you are using almond flour be sure to use superfine blanched almond flour!

Don’t forget the fresh thyme! It pairs SO perfectly with this crisp and makes it taste so well rounded and wholesome!

How to serve your vegan strawberry rhubarb crisp

Serve your vegan strawberry rhubarb pie with some vegan vanilla ice cream or top it with some vegan yogurt! I also love serving it with a few sprigs of fresh thyme for fanciness and it adds the best flavor to the dessert! You could also drizzle it with some extra maple syrup if you have a big sweet tooth or top it with my 3 ingredient high protein vegan icing for a healthy protein packed twist!

Strawberry Rhubarb Filling

  • 3 cups Chopped Strawberries
  • 4 stalks Rhubarb
  • Juice of half a lemon
  • 2 tbsp Maple Syrup

  • First wash and chop up your strawberries and rhubarb. Give them a rough chop then place them into a 9 inch pie pan or baking dish.
  • Add in the lemon juice and maple syrup and mix to combine.
  • Next, make your crumble. Add all of the ingredients into a large bowl and mix with a spoon to combine.
  • Add your crumble on top of the strawberry rhubarb mixture and spread it evenly over the top.
  • Bake at 350f for 30 minutes until the top is golden.
  • Serve with some fresh thyme – I highly recommend you do not omit this! It adds a glorious well rounded flavor! You can also top it with some vegan vanilla ice cream or yogurt or my high protein vegan icing (recipe linked above).
