Ingredients
  

Vegan Ricotta

  • 1 block of tofu
  • ½ cup of cashews
  • Juice of 2 lemons
  • 1 tbsp olive oil
  • 1 clove garlic
  • 1 tsp of salt
  • ½ tsp Italian seasonings

For the Toast

  • 6 slices of Baguette
  • 6 tbsp Vegan Pesto
  • 10 Cherry Tomatoes
  • Fresh Chopped Basil
  • Balsamic glaze

Instructions
 

  • First, make your vegan ricotta by blending all ingredients in a high-speed blender. Adjust salt and lemon to taste.
  • Place the ricotta in a piping or Ziplock bag and cut off the corner.
  • Toast your Baguette and spread it with vegan pesto. Pipe or spread the vegan ricotta over the toasted Baguette.
  • Top with halved cherry tomatoes, fresh basil, and balsamic glaze and enjoy!
