Ingredients
Vegan Ricotta
- 1 block of tofu
- ½ cup of cashews
- Juice of 2 lemons
- 1 tbsp olive oil
- 1 clove garlic
- 1 tsp of salt
- ½ tsp Italian seasonings
For the Toast
- 6 slices of Baguette
- 6 tbsp Vegan Pesto
- 10 Cherry Tomatoes
- Fresh Chopped Basil
- Balsamic glaze
Instructions
- First, make your vegan ricotta by blending all ingredients in a high-speed blender. Adjust salt and lemon to taste.
- Place the ricotta in a piping or Ziplock bag and cut off the corner.
- Toast your Baguette and spread it with vegan pesto. Pipe or spread the vegan ricotta over the toasted Baguette.
- Top with halved cherry tomatoes, fresh basil, and balsamic glaze and enjoy!
