Why You’ll Love This Recipe

Plant-Powered Nutrition – Edamame is one of the few plant-based foods that contains all nine essential amino acids, is low in calories, and is rich in dietary fiber, calcium, and Vitamin K. Combined with nutrient-dense, fiber-rich, and heart-healthy avocados, this edamame guac becomes a powerhouse of nutrition that’s extra satisfying while still feeling light.

10-Minute Healthy Meal – This protein-packed guacamole comes together in 10 minutes, making it perfect to beat the morning rush or when you need a light yet satisfying pick-me-up lunch on a lazy afternoon. Toss everything in a food processor and go.

Endless Ways to Enjoy – Serve it as a protein-packed dip with tortilla chips, crackers, or crunchy vegetables, or use it as a flavorful filling for crispy baked tacos, enchiladas, cheesy Mexican burritos, wraps, sandwiches, and grain bowls. It’s also fantastic spooned over roasted vegetables or spread onto toast. One of my favorite ways to enjoy this creamy and high-protein edamame guacamole is as a healthy, high-protein topping for my Sweet Potato Nachos.

Totally Customizable – Add toppings like pickled onions, crispy tofu, sliced cucumbers, radishes, microgreens, hemp hearts, or everything bagel seasoning for extra flavor and texture. You can also switch up the fresh herbs by replacing the dill with cilantro, parsley, chives, or even basil depending on your taste or what you have on hand.

Meal-Prep Friendly – This edamame guac recipe is ideal for meal prep because the edamame guacamole stores beautifully in the refrigerator for up to 3 days in an airtight container. While the vibrant green color may soften slightly over time due to the avocado, the fresh, zesty flavor stays just as delicious. Make a batch at the beginning of the week and enjoy it on bagels, sandwiches, wraps, or as a grab-and-go snack whenever hunger strikes.

Recipe Tips

Customize the texture: For an ultra-creamy, silky spread, process the ingredients in a food processor for about 1 full minute until completely smooth. If you prefer more texture, pulse a few times until the edamame is broken down, but small pieces are still visible for a heartier bite.

No food processor? No problem: Finely chop the cooked edamame, mash it together with the avocado using a fork or potato masher, then stir in the lemon juice, garlic, herbs, salt, and pepper until well combined.

Keep It Bright and Fresh: If you’re making the guacamole ahead of time, squeeze a generous layer of fresh lime (or lemon) juice over the surface before sealing it in an airtight container. Acidity helps slow the oxidation of the avocado, keeping this protein avocado dip fresher and greener for longer.

Switch Up the Herbs: Dill adds a fresh, vibrant flavor, but cilantro, parsley, or chives are all fantastic substitutes depending on your taste preferences or what you have available.
