How to make your healthy vegan nachos

These easy vegan nachos are made in a few simple steps!

First, slice your medium tortillas into triangles. Pre-heat your oven to 450f and arrange your tortilla triangles onto a baking tray. Bake your tortillas for 5-6 minutes until golden, watching carefully the last few minutes so they do not burn.

Next, make your cheese sauce. Chop and boil your potatoes and carrot until fork tender then add them to a high speed blender with the rest of the ingredients and blend until smooth.

Prepare your protein. Add some crumbled smoked tofu to a pan over medium heat along with some black beans, taco seasoning and tomato sauce. Pan fry for a few minutes until heated through.

Prepare your veggies. For this vegan nachos recipe I used tomato, green onions and black olives, but you can use any veggies you’d like!

Assemble your baked vegan nachos. Add your homemade tortilla chips to a baking tray, top with your protein and veggies and drizzle on that creamy cheese sauce!

Bake your nachos at 450f for 15 minutes, serve and enjoy!

Eat your nachos hot! These healthy nachos are best eaten right out of the oven! Like regular nachos the chips become soggy after a while so best to eat them right away!

Make it soy free! You can make these nachos soy free by swapping the tofu with extra black beans! Use 1 can of black beans to replace the tofu!

Swap the vegan nacho cheese sauce. If you are short on time you can simply swap the cheese sauce for your favorite brand of vegan cheese!

Switch up the veggies! You can try adding green olives, bell peppers, jalapenos and more!

If you don’t have smoked tofu use extra firm tofu. Just make sure to press it first using a tofu press so it can absorb all that delicious flavor!

Make half the recipe of cheese sauce if you don’t want leftovers. You will likely not use all of the cheese sauce for the nachos. I personally like to save it to use for tofu scrambles and wraps, but if you think you won’t use it best to half the recipe!

How to serve your healthy nachos

These healthy nachos are best served straight out of the oven! I love serving them with some extra cheese sauce for dipping and some homemade vegan sour cream! I am a sauce fanatic and love to drench everything is sauce so I usually use both! You could also pair these nachos with some simple homemade guacamole!

Healthy Vegan Nachos with Easy Homemade Cheese Sauce

These healthy vegan nachos are the perfect guilt free shareable! They are made with almost 100% whole foods and are topped with a deliciously creamy homemade cheese sauce! They are made with baked tortilla chips and are 100% oil free!

Ingredients
  

  • 6 medium Whole Wheat Tortillas

Nacho Cheese Sauce

Tofu Black Beans

  • 200g Smoked Tofu (or extra firm pressed tofu) crumbled
  • ½ cup Black Beans
  • 2 tbsp Taco Seasoning I used a mix of smoked paprika, cumin, onion powder, garlic powder and chili powder
  • ¼ cup Tomato Sauce

For Topping

  • 1 large Chopped Tomato
  • 3 stalks Green Onion
  • cup Black Olives

Instructions
 

  • Stack your tortillas on top of each other and slice them into triangles.
  • Spread out your tortilla triangles onto a few baking trays. You will need to do this in 2-3 batches as the tortillas will not all fit on one tray.
  • Bake at 450f for 5-7 minutes until slightly golden, making sure to watch carefully for the last few minutes so they do not burn. Take them out and assemble all of the triangles on a single baking tray. Set them aside to cool, they will harden a few minutes after they come out of the oven.
  • Next, make your cheese sauce. Roughly chop your potatoes and carrot and boil until soft. Strain and add them to a high speed blender with the rest of the ingredients and blend until completely smooth.
  • Make your tofu & black bean mixture. Heat up a pan over medium heat and add in your crumbled tofu, black beans, tomato sauce and taco seasoning. Cook for 3-4 minutes until heated through.
  • Assemble your nachos, Add on your chopped veggies, tofu & black bean mixture and drizzle your cheese sauce on top.
  • Bake at 450f for 15 minutes and serve with some extra cheese sauce, vegan sour cream or guacamole!

Notes
