Ingredients
  

  • ½ avocado sliced
  • 2 cups cooked sticky rice cooled
  • 1 sheet nori
  • 1 small sweet potato, cooked and mashed
  • ¼ cucumber thinly sliced
  • ½ block tofu thinly sliced
  • 2 tbsp coconut aminos
  • 2 tbsp sriracha mayo
  • Soy sauce for serving

Instructions
 

  • Cook the sticky rice ahead of time and allow it to cool completely.
  • Cook the sweet potato either:
    • In the oven at 400°F for 30 minutes, or
    • In the microwave by poking several holes with a fork and microwaving for 6 minutes, flipping halfway through. Once cooked, mash the sweet potato.
  • Once cooked, mash the sweet potato.
  • Thinly slice the cucumber and avocado. Thinly slice the tofu and toss it with the coconut aminos to marinate.
  • Line a square or rectangular glass container with plastic wrap, leaving enough overhang to lift everything out later.
  • Assemble the layers in this order:
    • Sliced avocado
    • 1 cup cooked rice
    • Nori (cut to fit the container)
    • Mashed sweet potato
    • Sliced cucumber
    • Marinated tofu
    • Remaining 1 cup of rice
    • Another layer of nori
  • Press each layer down firmly as you build to help everything hold together.
  • Flip the container onto a cutting board, remove the container, drizzle with the sriracha mayo, then carefully peel away the plastic wrap.
  • Slice into bite-sized pieces and serve with soy sauce for dipping.
