How to make Vegan Sushi Cake

Let’s dive in to create this delicious masterpiece!

Cook Sushi Rice:

First, cook your sushi rice according to the package directions. Let it cool to room temperature. You can quicken the process by spreading your cooked rice out onto a plate and putting it in the fridge.

Make Tofu Edamame Mousse

Next, make your tofu edamame mousse. Add your tofu, edamame, avocado, and coconut aminos into a blender and blend until smooth. Add water if needed and blend until you reach a mousse consistency.

Cut Nori Sheets

Use a knife to cut your nori into circles using your cake pan as a mould. 

Thinly slice your veggies

Shred the carrots and thinly slice the cucumbers and mangoes.

Assemble the Sushi Cake

Assemble your cake pan by placing 1 sheet of nori at the bottom, followed by a layer of rice, then a cucumber layer, followed by shredded carrots layer.

Place another nori sheet, followed by a layer of rice, sliced mangoes, and your tofu edamame mousse, followed by 1 more layer of nori and 1 more layer of rice.

Garnish & Serve

  • Use any container or cake pan if you do not have a spring foam cake pan. Just make sure to line it with plastic wrap beforehand. This will make it easier to remove the sushi cake once it’s set.
  • Serve with soy sauce or my homemade oil-free cashew sriracha mayo. The mayo adds a creamy and spicy kick that perfectly complements the sushi cake flavors.
  • Add greens like spinach and kale. Steam the greens for 5 minutes and season with salt and pepper.

The Best Rice to Make Sushi Cake

Choosing the right type of rice is crucial when making a sushi cake. Sushi rice is the most authentic choice for creating a sushi cake. Also known as short-grain Japanese rice, sushi rice has higher starch content which contributes to the desired stickiness that is essential for sushi.

Facing difficulty finding “sushi rice” in your nearby grocery stores? Don’t fret! Here are some alternatives. Short-grain white rice is a great alternative if you can’t find sushi rice. It has a similar sticky texture.

However, any short or medium grain rice will work fine! I usually prefer short grain brown rice for this sushi cake recipe. Keep in mind that brown rice may be less sticky than white rice, but it still yields delicious results. Another option is Calrose rice (medium-grained), which is readily available in most grocery stores and works well for sushi cakes.

Note: The key is using rice with a higher starch content, which contributes to the desired stickiness.
