This Easy Mediterranean Salad takes a mere 5 minutes to make and is packed with delicious flavor and tons of veggies! This summer salad has a zesty lemon tahini dressing and is so fresh and easy to make. Pair this salad with some rice to make a filling meal that you can make in under 15 minutes. This has been my go-to salad the past few weeks for its pure speed and simplicity!

  • Chickpeas
  • Cherry Tomatoes
  • Red Onion

How to make Easy Mediterranean Salad:

This salad is so easy to make and only takes about 5 minutes. This is my current go to salad recipe to make when I am in a rush! I love to pair it with some cooked rice to make it a large filling meal! To make this salad first make sure to wash your veggies well! Next, slice up your ingredients and start to assemble your salad. Place the lettuce on the bottom and all the other ingredients on top. Squeeze some fresh lemon juice on top and drizzle on a generous amount of tahini along with some salt and pepper! Serve and enjoy!

Jazz it up!

  • Add cooked rice or quinoa to make this a hearty and filling meal.
  • Try pan frying some tofu with coconut aminos to make some crispy tofu to add on top!
  • Add some oregano to kick the Mediterranean flavour to the next level.
  • Try adding a light drizzle of olive oil on top.
  • Top with some sundried tomatoes or roasted red peppers!
  • Try baking your chickpeas and making some crispy chickpeas to add some crunch!

Ingredients
  

  • 3 cups Romaine Lettuce
  • ½ cup Chickpeas
  • Large Cucumber
  • cup Cherry Tomatoes
  • 2 tbsp Red Onion
  • 3 tbsp Chopped Black Olives
  • Juive of 1 lemon
  • 2-3 tbsp Tahini
  • Salt & Pepper

Instructions
 

  • Wash and chop your ingredients.
  • Add all ingredients into a large bowl.
  • Top with lemon juice, tahini, salt & pepper.
